Profile
Dr. Roach directs the online Master's Program in Environmental Nutrition. As a registered dietitian with interests in food security, sustainability, and humanitarian nutrition she leads graduate courses, seminars, internships, and projects. Dr. Roach's goals are mentoring and facilitating applied, relevant course experiences for her students. One of Dr. Roach’s academic career highlights was serving as a Fulbright Scholar in Belize, Central America. Opportunities to develop numerous student study abroad experiences to Belize followed. Dr. Roach developed, led, and promotes study abroad programs focused on indigenous food ways to Costa Rica, Shanghai, China, Switzerland, and Florence, Italy. In addition, her annual work with the World Food Day Planning Committees in Washington, DC and international experiences contributed to the development of the current Master’s Degree Program in Environmental Nutrition.
